This is easily done, with standard hot canning procedures, using vinegar- you don't need a pressure cooker to do this- there are so many delicious recipes available online I don't have the room to tell here. Remember, if you are new to canning, your USDA extension service has excellent information.

My recipe for canning them involves putting them in a drier until they are leathery, soaking them in vinegar overnight to rehydrate them, then packing them in a quart jar of olive oil with dill and garlic and canning spices to taste.
