It is just simply called the cap. When you graduate you usually receive you cap and gown. When you are in high school the cap and gown usually represent your school colors. When you go to college they are simply black.

The hat has a couple of names that I know of. It real name, I think is the square academic cap. It is also often called a mortarboard because it is similar to a tool that brick layers use to hold mortar. I hope that this helps you with your question.
