CH3COOH is the chemical formula for acetic acid. Vinegar contains about 4% acetic acid. Most of the rest of vinegar is water. Vinegar is created through two biochemical processes, alcohol fermentation and acid fermentation. Alcohol fermentaion converts sugars into alcohol while acid fermentation converts alcohol to acid. It is the acid that give vinegar its bitter tase.
