Rather than peeling a peach with a knife, try this: Place the peach on a slotted spoon, immerse it in boiling water for about 30 seconds, then place in a bowl filled with cold water to stop the cooking process. The peel will slip off easily.

If you are removing skin to make pie, etc you can boil water, dunk the peaches in for about 1 minute and then immediately put them into a bowl full of ice water. Once cooled the skin will pull right off. For peeling raw fruit just a good paring knife.
