Salmon is the best tasting fish. Atlantic and pacific have different fat content, but both are good. Simply poaching the fish really brings out the flavor.

I agree that salmon is great tasting, but I prefer it grilled. about salmon being the best tasting fish - I personally wouldn't go that far. There are some fish from the northern Adriatic Sea that I don't think have English translations that are positively divine!  add a comment

The fish that tastes the best to me is catfish. I like it fried with a cornmeal batter or baked and served over rice.

Fried catfish? Really? I get the sense that you don't like fish very much, because deep fried and battered fish is almost not fish anymore - sure, it's good, but it's practically something else entirely. To each his own.  add a comment

Your question brings to mind a Latin expression, "De gustibus non disputatum est" or of tastes there can be no argument. In other words taste is a very personal experience and what one person may enjoy, another may detest. Fish meat generally falls into two categories: oily and dry. My favorites are Nile Perch and John Dory respectively.

I like salmon fish very much. It doesn't taste fishy at all, doesn't have much bones and if cooked right, is creamy and delicious.
