Staling is, quite simply, the process of a food turning stale. This can be a useful process when dealing with a food such as bread, since some recipes require dried bread crumbs or cubes.

staling includes a chemical and physical change in food which reduces food's palatability and that is due to growth of mold, furthermore staling can be reduced by refrigeration.
