First you will need a commercial kitchen or factory to prepare your sauce. You cannot bottle foods at home and sell it. It is against health code regulations.

You will need to contact the USDA to have your sauce tested. You will also need to have an ingredients list with USDA RDA information. You will find that the key is temperature and time during processing vs PH of the finished sauce. The actual TASTE of the sauce wont matter to USDA, they just need to check for safety.
