What is devonshire cream?

Devonshire cream is also known as clotted cream and is produced by allowing a vat of unpasteurized milk to settle, then heating it until the cream (milk fat) rises to the top and forms thick clots. This cream is skimmed off and used as a spread for scones and biscuits.
