Amylase is an enzyme that produces sugar by breaking starch down. Normally you think of this in the human body in the form of digestion. Human saliva contains this enzyme along with the pancreas which supplies the body with energy after breaking the starch down from the food.

Amylase is an enzyme that is found in human syliva. It breaks down starch into sugar and begins the digestion process. This enzyme is produced by the glands. The amount of amylase can be tested in blood or urine. Since amylase starts the process of turning start into sugar in your mouth, potatoes and rice can seem slightly sweet.
