A dual fryer is a deep frying station that has two separate oil wells that operate independently spo you can fry different foods which have different cooking temperatures or have flavors that will leach into the other.

A dual fryer has two baskets so that you can fry two different foods without them intermingling. Of course, the oil will still have slight flavor from both. If, for example, you wanted to fry shrimp and fries, you could do so without them touching and potentially getting stuck together. Other fryers have only one basket.
