It direcly refers to the issue of how you do the work you do, especially in the medical field. It is the matter of your personal interaction with your patients. For example in the TV show "House", Dr House fails greatly at having good bedside manners. It is telling someone the worse information possible and having them thank you.

This refers to how a healthcare professional like a nurse, doctor, or dentist interacts with patients. Having a good bedside manner means making patients feel comfortable. The idea is that the professional should make you feel comfortable enough that if you were very ill and they were attending you (at your bedside), you would feel good about their presence.
