What do you cook in "down home Southern cooking"?

Grits? Fried chicken?

There are many excellent Southern dishes but a lot of them are high fat. Some great dishes are southern fried chicken, cornbread, pecan or sweet potato pie, all kinds of greens, peach cobbler, etc. A creative cook could cut down on the fat that is used for collard and mustard greens and such.

Down home southern cooking includes a lot of different foods. For breakfast, yes, grits sometimes. For dinner, sure: fried chicken. But for those of who live here it just means cheap, nutritious and local, typically prepared without much seasoning beyond salt and pepper. Corn bread, black-eyed peas, okra, collard greens and cube steak are some other typical items.
