What can you do to prevent baked fish from drying out?

The first thing to do is to use the freshest fish possible because a fresh fish will have more moisture in it. Also, make sure you do not overcook the fish. Lastly, you can either batter the fish or add a liquid to the pan (wine, oul or water work well).

After the fish has cooled I place it in a shallow pan, create a seal by gently pressing plastic wrap onto the fish, and then refridgerate.
