What can you do about over salted eggs?

If the eggs are hard boiled, then you can rinse off the salt. If it is mixed in then there really is not much you can do.

If possible, you can cook some more eggs and not season them, then mix them in with the over salted eggs to counteract the saltyness. Adding a mild cheese like mozzarella can help as well, or turning it in to a mess plate by adding potatoes.

I don't know if anything you can do for over salted eggs. Depending on how you cooked them, you could cook more eggs and mix them if (if scrambled).

The best way to remove salt from any food that has been over-salted is to add a few slices of raw potato which will absorb the excess salt.

If your scrambled eggs are too salty, scramble a few more and don't salt them at all, then mix them thoroughly with the salty ones. The same is true of deviled eggs; boil a few more eggs, mash the (unsalted) yolks and mix in with your too salty filling to reduce the salty taste.
