What are the advantages of a gas burning stove?

Some family members are trying to talk me into getting one.

I am a trained chef and use gas burning stoves exclusively since the heat is more uniform and that makes cooking on them easier than electric stoves.

Over an electric stove, the main advantages are that it's usually cheaper to run (although this depends on where you live), it provides a continuously variable range of heat settings, and it's output is instantly adjustable. Anecdotally, they also seem to be more reliable.

gas stoves are considered better than electric ones because the heat is instant. when you turn on a burner or the oven instead of needing to 'preheat' the heat is there already. there ARE drawbacks tho. you have to make sure the pilot-light stays lit, and dont let the flame go out on the burners while the gas is on.

Gas burning stoves allow the operator to have a far greater control over what they are cooking. In my opinion this means that you will obtain better results and great food.
