Mostly all root vegetables would be considered as a comfort to eat in the wintertime. Potatoes, carrots, parsnips, turnips and sweet potatoes are all excellent examples. Brussels sprouts, cabbage, kale, collard greens, mustard greens and cauliflower can also be a really nice winter dish. Mixing the starchy grains with the leafy vegetables offers a wide variety.

Some vegetables that can grow in colder weather are the root vegetables mainley such as, carrots, potatoes, beets, these are also the vegetables which can be stored and preserved in a cold seller in the winter.
