You can't go wrong with the classic cornucopia centerpiece. You can make the 'horn' out of frozen bread dough that you shape into the cone and bake. Then fill it with fresh fruits and grains. Or you can create a centerpiece by tying different size candles together with twine and sit it in a wreath of seasonal corn cobs.

I like the look of a fall scented candle surrounded by colored leaves and gourds, and maybe add a small decorative scarecrow to the setting.
