What all does a prosecutor need to get a conviction for grand theft?

Usually they need evidence showing that someone intentionally took an item, and proof that the value of the item meets a certain threshold. They also need to show that the item was taken with the intent to permanently deprive the owner. What this evidence may be varies from case to case.

This is very subjective. All the prosecutor needs to do is convince the jury though evidence and witnesses are very beneficial to this.
