Please tell me, what is the difference between White Cornmeal & Yellow Cornmeal?

White cornmeal and yellow cornmeal are different colors because of the color of the corn when it was ground. Yellow cornmeal sometimes tends to be sweeter but both are used in breads, puddings and frying, etc. However, they are basically interchangeable in recipes. White cornmeal is popular in the South, while yellow cornmeal is used in Texas, New Mexico, etc.

The major difference seems to be the color of the corn used when the cornmeal is ground. The white cornmeal is ground from white corn, and the yellow cornmeal is produced from yellow corn. Another difference that is believed among many is that yellow cornmeal has a sweeter taste to it than white cornmeal.

Yellow cornmeal has a stronger taste and more vitamin B than white. It is also naturally sweeter than white cornmeal. However, they are interchangeable in recipes.

It's simple: they come from a different type of corn. There are dozens of varieties of corn out there, each with their own style of flavor and mix of vitamins and minerals. Whit Cornmeal is made from white corn and Yellow Cornmeal is made from yellow corn. Some recipes call for either one or the other.
