Is luncheon meat left over from good cuts of meat?

Or is it actual good meat?

As a trained chef, luncheon meats are disgusting and I would not serve them to my cat, luncheon meat is leftover meats at the end of the meat and they grind it up and push it together and make it into a pressed meat that usually has some ham, Bologna, and turkey nits and pieces in it.

I think it depends on the kind of meat. I mean, salami or pastrami? (Do those even count as luncheon meat?)
