A well-meaning friend just harvested 3 beautiful, but unripe, butternut squash from my vines. I am using them like zucchini and they are fine.

Yes, but you may or may not like the fact that it will not be as sweet as ripe squash.

I would say it is ok to eat unripe butternut squash, but why would you want to it will be very hard and not taste very good.
Since the #@$! squirrels starting eating my squash, I decided to pick them still upripe. Not a lot of flavor, but good for a stew. Better me than the squirrels.
