Gelatin does in fact come from animals; however, it doesn't come from horse hooves. Traditional gelatin found in things like Jell-O and is mainly made from processing material such as animal hides, bones, and tendons. Hooves however do not contain enough collagen. Kraft even made a statement that hooves are not used in the making of their Jell-O brand gelatin.

No, gelatin is not made by horse hooves. Gelatin is made by a protein and is made by other healthy animals such as cattle, and pigs. From the cattle they use the cattle bone, cattle hide, and from the pig they use fresh frozen pigskins. There are no chemicals added to the gelatin during the process of making it.
