A rolling average is an ever-changing average in which the last number is continuously being replaced by a new number; each time this occurs a new average or mean score is computed.

Rolling average, or moving average is a way to smooth out data in statistics. Basically from the input data, you always pick a fixed number of consecutive numbers, and find their average. Then you move the "windows" over which you found the average and continue the process.
