In cooking, what is heat transfer?

When food is in a hot oven, or in a hot container on top of the stove the exposure to heat cooks the food. For example, a cake in an angel food cake pan "climbs" the sides of the pan because the transfer of heat from the oven from the cake pan to the batter causes it to expand.

When cooking, you need something (medium) to transfer the heat (like fire) to the food like oil, water, pan, air. When you are cooking, you must calculate the proper heat transfer. Too much and it's burn. The wrong medium and it will taste really bad...
