If Smoking pot = munchies, eating chinese food = hungry, would eating chinese buffet stoned be like a goldfish, eating until you explode?

Not if you ate slowly. One hour after eating Chinese, you're hungry again. So pacing oneself would prevent explosion.

It would be like a goldfish chillin at the bottom of the bowl and swimming upside down. Being stoned would not make it hungry till it exploded, just relaxed and lazy.

Yes, you will definitely explode like that Monty Python's "The Meaning of Life" restaurant scene. It is a scientific act that goldfish often smoke pot specifically so that they can eat until they explode. Chinese food is an excellent source of explosive material, as well. Good luck with this.
