How much rent should I charge an adult son and girlfriend?

Charge them what you would charge anyone else who rented the space. If they are living in y our home with you, calculate an amount that you feel is fair for the use of space, additional utilities and whether they are helping out with household chores.

Charge them 1/2 the cost of running the household (mortgage and utilities) but do not charge them extra for food. It is reasonable to charge extra for food if they have special dietary requirements which cannot be reasonably met without the household budget. It's also reasonable to expect chores as part of their rent.

You should charge enough rent so that your son is not taking you for granted and he is being responsible in that he is paying a bill that he should he paying anyway if he was living on his own. You can charge less than market so that he is saving some money but the goal is him moving out.

Depending on the living conditions, location and knowing they are family, give them a reasonable rent, with a slight family discount. There are many variables in this scenario to take into consideration.
