It will probably take you a good six months if you want it to look like brand new. It also ultimately depends on how beat up the truck is. If it is really bad shape it could take longer.

Well this all depends on how much free time, money, and, resources you have. With little money or help it could take years to restore a car that is in bad condition. However if you have money to replace more parts it can take less time. The more experience you have the fate the process will go.
