How is fondant affected when it's humid?

Warm and humid weather will make the fondant sweat and become shiny. Moisture will dissolve the sugar in the fondant.

When it's humid, fondant has a tendency to sweat -- develop little drops of moisture on the surface -- or even melt. It can also stick to the table and utensils when you're trying to work with it. Working in air conditioning helps, and everything should be at room temp before you begin. If it's sticky, try a little cornstarch.

Fondant becomes moist and very difficult to work with. If you are using it to establish a cake structure, well, look out. It will bend, flop, and be entirely aggravating. Don't be too surprised, if the humidity is high enough, if it sags or singly rolls off the cake. Practice in the humidity first!
