First of all I need to inform you a valve job can be very labor intensive and if you have to ask then you are off to bad start. You might want to take it to a shop cause it can require special equipment and tools. You need to figure out what caused the bad valve in the first place

To repair a Valve in the cylinder head of a jetta can be complicated to do it would be expensive it would be a cheaper route just to replace it with one that you find at a junk yard or online. A machince shop can cost on uppwards of $700

i assume you are talking about an intake or exhuast valve. the actual changing of the valve itself is not that complicated. the complicated part is getting to the vavle. the entire top half of the motor must be taken apart, then the head removed to access the valve. special tools are needed to release the vavle spring.

Not hard if you have done it before.If you never rebuild a top end of a motor is could be real hard,IT take's a good bit of removing part's piece by piece and keeping bolt's organized. also use a mechanic manual it will make the job Easier.
