If all else fails, the Charlie Brown Thanksgiving video has a scene where Linus tells the story of the first Thanksgiving. I know that this sounds corny, but he also does it for Christmas, and it is as sound an explanation as I have ever heard.

Review the history of Thanksgiving, and read the governor's and president's proclamations together -- these are written annually for the holiday. Learning thankfulness is another, deeper matter: volunteer together at a shelter or soup kitchen, take inventory together of things you are thankful for, pose a hypothetical like, "If we survived an earthquake would we be glad to be alive?"

Invite them over for dinner and at dinner have everyone around the table say what they are thankful for. That's the real meaning of thanksgiving.
