How do you season a wok?

Only iron and steel woks should be seasoned. If you have a Teflon coated or stainless steel, please DO NOT ATTEMPT! You must scrub it inside and out with vegetable oil and a steel wool scouring pad to remove the coating or rust. Rinse with HOT water. Coat wok with olive oil and bake it at 350 for two hours.

To season a wok, heat the wok on a medium heat. Wipe the wok down with an oil with a high smoking temperature, such as canola or vegetable oil. Heat the wok for 15 minutes, then it can be used. Wash gently and over time a black patina will form.

Place clean wok over medium heat. Use a folded paper towel soaked with vegetable oil to thinly coat wok. Heat wok for 15 minutes. Cool and use. Repeat if necessary.
