The most common method is to use two condenser mics over the center of keyboard, a few inches back from the hammers and about 12 - 18" above. Point one mic towards the lower strings and one towards the higher strings. If you only have one mic, position it in the center of the piano as high as you can.

While this is a little more complicated than micing other acoustic instruments, the concept is the same. You need to place a microphone (probably a dynamic mic) near the source of the sound. This will vary between pianos, but it is usually near the top of the piano, where the hammer strikes the strings.
