How do you make dry cured bacon?

There are a lot of recipes you can look up on the internet on how to do this. Basically you rub it in a seasoned cure mix and let it set for a few weeks in a cool place. Draining it daily and re-rubbing it with cure.

Search for "parma ham manufacture", but it's not for novices. The people that do it have shown that the way they do it gives a hygienic product. They are allowed to carry on because they have history to prove that. If you were to do this commercially, you would have to provide 5 years microbiological data to the FDA.

Thoroughly rub cure into every part of pork. Place each finished piece in a cold box, cover and store in cool area. Drain every 24 hours, up to 2 weeks.
