Anytime you type in a web address, or an e-mail address, word automatically converts it to a hyperlink. But for some of us, it's an occasional thing, and the blue under line is a pain. To fix, right click on the e-mail, then click Remove Hyperlink in the box that opens.

You can click on the Formatting toolbar, click the Underline button or you can simply click the CTRL button and U in the same time.
