How do you grow a poinsettia plant into a tree?

My plants are near dead after the holidays.

You don't. The poinsettia "trees" you see are individual plants placed on special racks to make the grouping appear to be a tree. In the right climate, a poinsettia will grow into a big bush. A poinsettia can also be a nice houseplant if kept re-potted and not over watered.

To answer your question bluntly, you don't. Poinsettia trees at best will just grow into a large bush, but will not grown into a tree.

Too much water is often the cause of death of a poinsettia plant. Just put them into the ground outside and water sparringly. I have three here in ohio.

Well you have to keep fertilizing them to make them grow and don't water them too much. Too much water can seriously kill them.
