Score the chestnuts with a cross-shape using a knife while you're preheating the oven to 220 Celsius. After arranging the chestnuts in an oven dish (or you could just use a baking sheet on the over tray), cook until the chestnuts are easy to shell (this can take 15 minutes to half an hour).

Preheat your oven to 425 degress F. Clean the chestnuts and using a sharp knife, make a small X in the side of each one. Lay the X side up in a roasting pan and roast 15 to 25 minutes until they are easy to peel.

Chestnuts should be washed first and let dry. Then preheat oven and make a small slit on the flat side of the nut. Put them on a cookie sheet in the oven. You will know they are done when you begin to smell them and the nut's flesh is soft.
