How do you go about freezing tomatoes?

Do frozen tomatoes taste good?

Use them for soups, stews and sauces as they get mushy when frozen. You can freeze them with the skin or without. Wash them under running water, dry well, slice off the stem end. If you want to remove the skin, drop them in boiling water for one minute, slip off the skin. Freeze them pureed, sliced, chopped, etc.

If the cook is skilled frozen tomatoes should taste good. Blanching the tomatoes stops the enzymes that make vegetables taste stale, and using a drier helps strengthen the flavor so if you freeze a good tasting tomato it will also taste good after freezing.

Frozen tomatoes work very well in cooking such as stews, soups, pot roast etc. Peel, quarter the tomato and drop in boiling water for about one minute. Remove, cool under cold water, put in plastic bag and seal well. I usually double bag them.

Well, to freeze tomatoes just leave them uncut. Make sure they have been washed and place them in a ziploc bag. I don't freeze them. It leaves an odd aftertaste.
