Raw tomatoes can be preserved for future use in cooking quite easily. Rinse the tomatoes to clean and place on a rack in the freezer. Once the tomatoes are frozen, they can be transferred to freezer bags for use later. This work particularly well in spaghetti sauce and chili.

Tomatoes can be frozen with or without their peels. To freeze with the peels, wash the tomato, remove the scar that has resulted from the stem and place in the freezer on a flat pan. To freeze without the peels, remove the peels by placing the tomatoes in boiling water, peel the skin and place in the freezer as well.

Wash the tomatoes and put them in boiling water for 2 min. Put in cold water and remove the skins. Cut in pieces, put in containers and in freezer.
