How do you "field dress" an elk?

Start at the groin area and cut up, careful to not pierce any organs. Once at the diaphragm you'll need to carefully pull the intestines out so you can get inside the chest cavity. Saw through the diaphragm, reach up with your knife past the lungs and cut the tubes.

Field dressing removes the internal organs of the elk, and is a necessary step in preserving meat from animals harvested in the wild. Be careful when approaching an elk that has been shot in the wild.

You will need to start from the hind legs and cut around the center of the bottom making sure you do not cut the stomach or intestines. Then you will need to peel away the skin till it is all cleaned.
