The simplest way to create a graph in Excel is to select the rows & columns containing the labels and data and click on the graph icon. This will bring up a dialog that will allow you to choose the graph type, labels, etc. Changing the data in the associated cells will automatically update the graph.

To create a dynamic graph, simply create the table where all the data will be, highlight that table, and then go to insert>graph. Then, using the graph wizard, choose your type of graph and click finish. If you change things on the table, the graph will change accordingly.

Use formulas to draw over a range of series. If you want to draw in sheet1, For column A, B write formulas as =OFFSET(Sheet1!$a$1,1,0,counta($a:$a)-1), offset(sheet1!$b$1,1,0,counta($b:$b)-1).Give names for these two formulas and use formula bar/dialog box.Select the required graph and edit the series formula with your newly defined formula names

Just mark the rows you want to visualize. You are just allowed to mark two rows for x and y. Then right click and select display as graph. Then choose x-y-diagram.
