To start with you need to dress properly as well as have your questions for the interview ready before you go into it as well as do not get off topic during the interview it happens easily trust me be very to the point and don't drag it out forever.

Review their Application if it matches what you want then sit down with the person and discuss Duties, Goals, Pay , Benefits , Hours and Personal Problems that the applicant may have like a disabled child who need extra care. If it all meshes them then Make them a offer.
