How can I roast brinjal in my oven?

Slice the brinjal lengthways, brush with oil and roast for about 40 minutes. Or prick it whole with a fork, brush with oil and roast for 50 minutes.

Apply little oil over the brinjal,wrap it in aluminium foil and keep it in the oven for around 3mins, the brinjal will be roasted and ready to use.

Roasting of the brinjal is easier tasks. First of all wash it with water ,slice the brinjal in to pieces. Use the grill of the owen to place the pieces of brinjal. Set the owen heating time to 5-6 minutes. The brinjals will be roasted.

In southern part of india brinjal is mostly used. In order to roast the brinjal in oven, clean the brinjal in normal water and not peeled off. put the brinjal in low flame in oven.you change the side many time till outside skin getting black. this the limit.

To oven-roast brinjal (eggplant), pierce several times with a skewer and roast (whole and unpeeled) on a foil-lined baking sheet at 350°F for about an hour until it is soft and starting to collapse. Peel and drain out the moisture from the flesh in a colander.

Brinjal is the Indian word for eggplant, aka aubergine, so you can search the web for roasted eggplant/aubergine recipes. Cut into slices, rub each with salt and herbs, dust off the salt, brush with oil and roast in aluminum foil at 400degF for 30min. Roast longer to make vegetable paté.
