Well some of bigger capacity ones like the classic model use a small version of a hard drive. The smaller models use a solid state storage system. You can remove the hard drive from an Ipod but it can be complicated and you could potential damage it.

Yes, every mp3 player must have a hard drive to hold it's music and info. You can remove it by opening the cover, but I wouldn't suggest it, as it voids your warranty and can lead to many other problems if you don't know exactly what you're doing.
