Do any of the major religions believe dinosaurs didn't exist?

I can only speak for Christianity, for which the answer is no. Large beasts or dinosaurs are not mentioned in the Bible, which is really the only reference book that Christians use. The Bible mentions giants in the old testament, but I think that refers to just a tribe of tall people.

Fundamentalist religions that believe the Judeo-Christian bible is historically accurate have difficulty explaining dinosaurs. Some, for example, argue dinosaurs coexisted with Noah and that he brought baby dinosaurs with him on the Ark. Most fundamentalists choose that type of explanation over arguing that dinosaurs did not exist at all, although they all dispute the validity of carbon dating techniques.
