Can you give some recipes for diabetic cookies?

The titles of some cookbooks would be helpful, too.

One recipe for a peanut butter cookie that is sweetened with splenda uses one cup of peanut butter, one egg, 6-7 packets of splenda and all of the ingredients must be mixed together with a blender and baked in the oven for 15-20 minutes.

You can go to Barnes and Noble bookstores, they carry a wide variety of diabetic cookbooks. One in particular is, Diabetic Cookies by byMary Jane Finsand. The book gives you a conversion chart for sugar also.

The Diabetic Gourmet Magazine website has lots of recipes for diabetic cookies. Some cookbooks are Diabetic Candy, Cookie & Dessert Cookbook, or Diabetic Cookies by Mary Jane Finsand.

With diabetic cookies you can just add splenda. Try the chocolate almond Meringues. This recipe is pretty good and very easy to make. Also for chocolate lovers, Chcolate cherry bars and Ginger Spice Biscotti. I honestly prefer sugar cookies which can be made from Equal, Splenda, or sweet n low. You can checkout the diabetic cookbook with 500 recipes.
