Pesto sauce would be a nice change. Blend 3 cups fresh basil leaves, 1 1/2 cups chopped walnuts, 4 peeled garlic cloves and 1/4 cup grated parmesan cheese. Slowly pour in 1 cup olive oil while still mixing. Stop blender. Stir in salt and pepper to taste. Pour over pasta.

One thing New could be to use pureed bell peppers in place of tomatoes, using the same spices as a tomato sauce.A spinach sauce would work, too, with pinenuts, garlic, paprika, dill, basil, thyme, tarragon, lemon juice, onions, capers, olive oil, black pepper, and sausage. You could omit the sausage if you're a vegetarian.A Thai-style pasta sauce with peanut butter or peanut oil, ground red pepper flakes, basil, cumin, garlic, fish sauce, cilantro, and onions would be good, too.

There are many pasta sauces that are not made from tomatoes. For a switch-up try alfredo, pesto, carbonara, or a marsala sauce. Alfredo and pesto sauces can be purchased ready made from many grocery stores. All four types of sauce have excellent recipes available on most recipe websites.
