Can anyone share an authentic pasta dough recipe?

Ahh.. so dependent on who decides what is the best pasta. All pasta result from a type of flour, egg, and water. Now the flour used is usually durum flour. However, any freshly made pasta will beat the socks off of that dried stuff you get at the grocery store, so play around and find a recipe YOU LIKE.

2 lbs. flour, 4 eggs, 1/2 tsp. salt, 1 c. warm water. Make a well with 3/4 of the flour; add salt, eggs, water. Knead 20 mins.

The simplest and best is made of three ingredients. Mix together flour and a bit of salt together then add water(enough to form a nice dough).

2 lbs flour 4 eggs 1/2 tsp salt 1 c warm water 1. Make a well with the flour; add salt and eggs and mix together slowly, adding water as necessary. 2. Knead about 10 minsutes, cover and let dough rest for 10 minutes, then knead again until smooth.
