Are letter-stuffing jobs legit?

They sound too good to be true.

They are too good to be true unfortunately. There are many volunteer opportunities to do such simple manual tasks like stuffing letters for a charity, but honestly there are easily-obtained machines that cost less than payroll and take less time to churn out a larger amount, making them more cost effective than hiring a person even at minimum wage.

If you are thinking of taking a job stuffing letters be very careful of the company. Many of these are not legitimate businesses and will ask you for money upfront.

No, they are not legitimate. A company can buy a machine to do this for several thousand dollars that stuffs thousands of envelopes an hour. These "job offers" are scams. Work for UPS and FedEx, they pay up to $20 an hour to sort packages.

Mostly all of the jobs that say you can make money stuffing a letter are scams. If the job is offered locally and it says you have to come into the office for materials it might be legit.

No, these jobs are generally not legitimate. A machine can be purchased for several hundred dollars to stuff hundreds of envelopes an hour. Unless it is a small charity or church that hires people for several hours a month stuffing newsletters into envelopes, no one hires for this kind of position.
